First things first, what the heck is taro anyways…
Walk into any boba tea shop and ask them what their top selling drink is, they will almost certainly tell you that it is the taro slush. But what is taro? You then ask. They smile… (knowing the question was inevitable), and say, “It’s a purple sweet potato. The flavor is sweet and nutty with a hint of vanilla. If you’ve never tried it before, it will change your life.” And to me… the flavor very much tasted like kettle corn popcorn and I couldn’t get enough of it.
Taro or Ube… whats the difference?
Taro is actually not a sweet potato at all and it is actually a corm, which is a thick modified stem. It has a dark exterior with a white interior with purple veins that run through it giving it a speckled look when sliced open. Because it is often described as a purple sweet potato, taro is often confused with the actual purple sweet potato known as ube which has a similar flavor to taro. Unlike taro, ube is a genuine tuber. Ube has a very light almost white exterior and a bright solid purple interior. Because of these similarities many people and companies incorrectly use the names ube and taro interchangeably.
A little back story on our Salted Taro Mallows
While enjoying a taro boba slush and contemplating gifting hand made marshmallows and/or kettle corn during the 2021 holiday season, Dmitri (co-owner of Kaiju Candy Store, LLC) realized that the taro flavor would make a far better marshmallow flavoring than the traditional vanilla that was used in previous years.
